Pilaf
Pilaf is the hallmark of Uzbek cuisine, combining rice, meat (most often lamb), carrots and spices. It is cooked over an open fire, each region has its own unique recipe.

Shurpa
Shurpa is a rich, flavorful meat soup with lots of vegetables, including potatoes, carrots, peppers and tomatoes. It is ideal for recuperation and is suitable for any season.

Samsa
Samsa — pies with various fillings, including meat, spinach, pumpkin or potatoes. The dough for samsa is flaky and crispy, and the filling is juicy and fragrant. Served hot, often as an appetizer.

Tortillas
Uzbek bread (tortillas) is baked in clay ovens (tandoor) and is characterized by a special crispy crust and soft, fragrant crumb. It is an integral part of every meal.

Mantas
Manti are steamed dumplings made from thinly rolled dough, filled with meat, onions and sometimes pumpkin. Served with sour cream or vinegar, straight from the steamer.

Shashlik
Shish kebab is marinated meat (lamb, beef or chicken), strung on skewers and fried on coals until crisp. It serves as an excellent addition to the festive table.
